Secrets of India

Raji is going to cook for you Northern Indian Cuisine.

The session will commence with you learning how to roll basic Indian bread. Then Raji will explain the history of yellow lentils and their significance to Indian cuisine. This will be followed by a traditional chicken curry served with raita and papadum.

Sounds yummy! Don't you think? Impress your friends and family with this Northern Indian staple and couple this with an intriguing story as to the history and importance of these meals to thousands of generations of people that resonate from Northen India.


Course Duration

  • The course is 3.5 hours in duration.


  • All participants will be given the opportunity to cook, under the chefs direction.
  • Participants will be provided with knife kits, aprons and utilise commercial cooking equipment supplied by our industry sponsor Fagor.
  • The Fagor Cooking School is a $1,000,000.00 development of Hospitality Training Australia.

  • Each participant receives a recipe pack so they have all the information to prepare this meal at home for friends and family.

Chef Raji Kumar - Cooking Instructor

Raji was trained in various 5 Star Restaurants and Hotels in India, specialising in French and Indian Cooking, before immigrating to Australia. He obtained his Advance Diploma in Cookery and has worked as a chef in various restaurants and function venues in Melbourne which include The Grand Hyatt, Australian Grand Prix and Commonwealth Games in Melbourne. All these experiences has helped him to nourish and sharpen his skills in continental cooking.

His passion for cooking lead him to obtain his Certificate IV in Training and Assessment as he was keen to share this passion and pass on his skills. He has worked as a cookery trainer for the past 4 years which has been very rewarding as he has seen many of his students obtain employment in the industry as qualified chefs.

Raji works each Christmas holiday season in Lorne which helps to keep him updated with the current trends of the cooking industry and also keeps his knowledge up to date.

Raji is a good communicator and has indepth subject knowledge and passion for cooking. He enjoys sharing his cooking skills and exploring different levels of cooking.
